Summer Strawberry Salad

Great for a barbecue, this Summer Strawberry Salad provides satisfying sweetness that will even satisfy the non-salad lovers in your family! Full of sweet strawberries, honeycomb, creamy ricotta, and rhubarb, this salad can be used as an unconventional dessert.

Notes:

Rhubarb can be pretty woody and difficult to handle. Instead of thinly slicing the rhubarb with a knife, I took a vegetable peeler and created this strips of rhubarb. This made it more salad-like for me overall and minimizes the toughness anyone may experience eating the rhubarb.

The recipe calls for honeycomb which I was able to find on Amazon. The honeycomb provides a slightly different flavor and texture than normal honey. If you don't want to go that route then you can sub-in some good local honey from your area.
